Most people believe coffee quality starts at the plantation. They're only half right. What happens in the first fifteen minutes of roasting can either unlock the complex flavors locked inside each bean or destroy them completely.

In Poland, we've grown accustomed to coffee that tastes burnt, bitter, or flat. We accept it as normal. But this is not what coffee should taste like.

The Problem with Industrial Coffee

Large commercial roasters operate at scale. They roast thousands of kilograms per hour. At that volume, precision becomes impossible. Beans are over-roasted to mask defects and ensure consistency across massive batches.

The result? Coffee that all tastes the same. Dark, bitter, one-dimensional.

What Changes During Roasting

Green coffee beans contain chlorogenic acids, proteins, and sugars. When heated to precise temperatures between 180°C and 220°C, these compounds undergo the Maillard reaction and caramelization processes.

Research shows that roasting temperature and duration directly affect the concentration of beneficial compounds like caffeic acid and quinic acid [1]. Each origin requires different roasting profiles to reveal its unique characteristics.

Small Batch Roasting: A Different Philosophy

We roast in 15-kilogram batches. This allows us to monitor temperature curves with precision, adjusting airflow and heat in real-time based on how each specific lot of beans responds.

Ethiopian Yirgacheffe beans behave differently than Brazilian Santos. Colombian beans require different treatment than Kenyan AA. Industrial roasters ignore these differences. We embrace them.

Why Freshness Matters More Than You Think

Coffee begins losing flavor compounds immediately after roasting. The degradation accelerates after two weeks. Supermarket coffee often sits on shelves for months.

We roast on Tuesdays and Fridays. When you order, your coffee hasn't been sitting in a warehouse. It was likely roasted within the last three days.
